Ingredients
- 2 tsp cumin
- 1 stick cinnamon
- 4 bay leaves
- 1 tsp salt
- 1 big red/yellow onion, sliced longitudinally
- 1 cup basmati rice
Instructions
- Soak rice in cold water for 15 minutes. Rinse the water.
- In a heavy base saucepan (with lid), add two tablespoons of oil.
- Heat the oil and add cumin seeds for 20 seconds until they sizzle. Add the cinnamon and bay leaves.
- Add the onion and cook till it caramelizes.
- Add the washed rice. Add two cups of water and salt, and simmer on medium heat until you can barely see the water.
- Turn the heat off. Put the lid on and let the rice rest for at least 10 minutes.
Pea Pulao
- Add 1 cup thawed peas after the onions and before adding rice.
Vegetable Pulao
- Add one cup of finely chopped vegetables (carrot, peas, broccoli) after the onions and before adding rice.
Make it a bit fancier
- Toast a handful of nuts in butter and add on the top before serving.
